Trim asparagus and either steam or boil for around 5 minutes until tender. If you have the BBQ out, you can even chargrill your asparagus for extra flavour!
Drain and rinse your chickpeas. Chop hazelnuts and roughly shred lettuce. If your parmesan is already sliced, simply measure your portion size. Otherwise finely slice.
Prepare dressing by mixing extra virgin olive oil, lemon juice and mustard in a small bowl. Assemble salad and drizzle dressing. Toss well, season with salt and pepper, and serve. Enjoy!
