Christmas Cake

    It’s cake time! This fruity, spicy recipe will fill you with Christmas cheer. Serve it up to your hungry friends after dinner or lunch and watch them practically fall in love with you.

  • Step 1

    Pre-heat the oven to 170 degrees celsius. Line a medium sized cake tin with baking paper. Chop your pitted dates.

  • Step 2

    Combine all wet ingredients in a large mixing bowl and mix until combined. Add dry ingredients and mix through. Pour cake mix into cake tin.

  • Step 3

    Place in the oven and bake for 45-50 minutes or until cooked through. Allow to cool, serve, and enjoy!

  • Extra Notes

    Your mixed spice should include cinnamon and nutmeg. If you don’t have a pre-mixed spice, just make your own using whatever you have to hand including cinnamon, nutmeg, ginger and cloves!

    almond meal
  • 80  ml
    greek yoghurt
  • 2  tsp
    cinnamon

    mixed spice
  • 1  tsp
    vanilla essence
  • 2  tbsp
    rice malt syrup
  • 2  tbsp
    coconut oil
  • 2  tbsp
    nut butter
