Chicken, Pomegranate and Spinach Salad

    G’day, summer! This salad just tastes like summer in Australia, doesn’t it? While your cousins play backyard cricket, whip up this tasty side dish – you’ll be done in no time!

  • Step 1

    Shred the cabbage and roughly chop the parsley. Roast the pepitas in a fry pan for 2 minutes until toasted.

  • Step 2

    Create your dressing by mixing extra virgin olive oil and apple cider vinegar in a small bowl, seasoning with salt and pepper. Assemble your salad by throwing all of the ingredients in a large bowl and top with dressing. Mix well and serve. Enjoy!
