Berry Good Vanilla Jelly

  • Why We Love It

    They say good things take time, and when it comes to this Berry Good Vanilla Jelly, we tend to agree. This one is time-consuming, but it’s also very fun to make and totally worth it! Save this for an occasion when you’re looking to impress – it will get everyone talking.

  • Step 1

    Let's start with the blueberry layer! Combine a 1/4 cup of water and 1 1/2 tablespoons of the gelatin and set aside. Blend all the blueberries, one third of the sweetener, one third of the vanilla, and 1 cup of water on high until the blueberries are as fine as you can get them, set aside.

  • Step 2

    In a low heated saucepan, melt down the gelatin mix with just a little dash of the blueberry mix, continually stirring until the gelatin has completely dissolved. Remove from the heat and combine.

  • Step 3

    In a tray lined with baking paper (I use an average loaf tin), pour the mix in and while you do the following layers, set in the fridge for roughly an hour, or the freezer for roughly 20 to 30 minutes or until completely firm but not frozen!

  • Step 4

    Now for the coconut vanilla layer! Combine a 1/4 cup of water and another 1 1/2 tablespoons of gelatin and set aside. In a low heated saucepan add the gelatin mix to the coconut cream, cacao butter, sweetener, vanilla and gently stir until well combined and gelatin has completely dissolved. Set aside to cool slightly.

  • Step 5

    Once blueberry layer has set and the coconut vanilla mix has cooled slightly (so it doesn't melt the blueberry layer) pour the mix over the top and set in the fridge for roughly an hour, or the freezer for roughly 20 to 30 minutes or until completely firm but not frozen!

  • Step 6

    And, last but not least, it's time for the raspberry layer! Combine a 1/4 cup of water and the gelatin and set aside. Blend all of the remaining ingredients (raspberries, sweetener, vanilla, water) on high until the raspberries are as fine as you can get them, and then strain through a strainer and set aside.

  • Step 7

    In a low heated saucepan, melt down the gelatin mix with just a little dash of the raspberry mix, continually stirring until the gelatin has completely dissolved. Remove from the heat, and combine all of the ingredients.

  • Step 8

    Once cooled slightly, pour the mix over the vanilla layer and set in the fridge for roughly an hour, or the freezer for roughly 20 to 30 minutes. Serve and enjoy!

  • Extra Notes

    To all the beautiful veggies out there, please note that gelatine is not vegetarian but you can buy vegetarian gelatine powder at all larger supermarkets!
