There’s nothing wrong with having a sweet tooth! What matters is the types of sweets you eat! This Cherrylicious Ripe is all killer, no filler. So no refined sugar, no nasties. And because we’re nice, we’re sharing the recipe. What are you waiting for?
1 cup frozen cherries
1 cup oats
1 tbsp rice malt syrup
100g dark chocolate
½ cup dessicated coconut
½ tsp vanilla essence
¼ cup coconut oil
Place all of your ingredients apart from the chocolate in a blender and blitz until your mixture comes together. Be careful not to over-blend as we still want some texture.
Press firmly into a greased, lined baking tray. Place in the freezer and leave until firm (this could take up to 2 hours). This step is necessary for the filling to stay together so you can coat with chocolate.
Once the mixture is firm, take out of the freezer and cut into bars. You can choose to create either 10 full size bars, or whatever size you prefer. Melt your chocolate in a bowl over a pan of boiling water. Using a fork, dip the bars into the chocolate. Keep stored in the freezer until you want to eat.
